Secret Method to Make The Most Delicious Vietnamese Sweet and Sour Pork Ribs

Vietnamese sweet and sour pork ribs is probably a well-known dish in every meal of Vietnamese people. The sour taste of lemon, the sweetness of sugar and the delicious taste of fresh pork ribs combine to form an engaging dish that you cannot deny. Indeed, with the sweet and sour pork ribs, your family’s meal will become more interesting and more delicious.

Even though this Vietnamese Sweet and Sour Pork Ribs Recipe is familiar in Vietnam, but it also needs a specific secret to ensure the sweet and sour ribs in the right flavour and taste. Note: You should choose the fresh pork ribs. It usually is small ribs, so when processing our ribs dish, it will be soft and not too dry. Fresh new ribs are an important factor to decide whether your food is appealing, enjoyable and standard.

The Delicious Vietnamese Sweet and Sour Pork Ribs Recipe

I. What to prepare:

  • Fresh pork ribs: about 500g
  • Shallots, pepper, garlic, salt
  • Fish sauce, chillies sauce, tomato sauce
  • Fresh Lime, fresh chillies
  • If you don’t have lime, you can use vinegar instead.

II. How to cook:

Step 1:

  • Add about 1 litre of water to a pot. Put a pot of water on the stove and wait till it boils. While it’s boiling, drop the ribs into the pot and blanch for about a few minutes. After blanching, wash the ribs again then leave the ribs to drain. By blanching, the ribs will be tender and have a better smell.
  • Add salt and a little cooking oil to the ribs and season, keep it marinate for about 30 minutes. You can add more spices or MGS to season the ribs as your own favourite taste.

Step 2: 

  • Peel off the skin of garlic and shallots, wash and mince them.
  • Chop a few slides of fresh chillies. The amount of chillies depends on your own choice of spicy.
  • Squeeze a fresh lime to get the lime juice. Put the lime juice aside for later.

Step 3:

  • Whether your ribs taste good or not, it depends very much on the sauce.
  • To prepare a great sauce: Put together about 2 tablespoons of fish sauce + 3-4 tablespoons of boiled water + 3 teaspoons of sugar + a little salt + 1 tablespoons of chillies sauce and tomato sauce. You can use fresh tomatoes if you don’t like tomato sauce.
  • Then add half of the minced shallots, garlic to the sauce and mix them well. Leave them aside to marinate, and infuse the spices.
  • Remember to mix the sauce well, especially season it to the right taste. You can also add a few slices of chilli to make the sauce spicier or adjust the sauce as your own taste.

Step 4: 

  • When the marinating time is finished, put the pan on the stove and add some cooking oil. Wait until the oil starts to boil, then add the ribs to fry.
  • The ribs need to fry to golden colour, it will make the ribs taste better and be more delicious.
  • When the ribs are cooked, take them out and go to the next step.

Note: Do not fry the ribs for too long on high heat. Remember to keep them on the medium heat. If you fry them for a long time, the meat will be dry, not be sweet and juicy anymore. Try to fry until the ribs are golden evenly.

Step 5:

  • Finally, on the pan that you fried the ribs, keep a little oil and add the minced shallots, garlic then stir well.

  • Pour the sauce to the pan and stir. Put the fried ribs on top of the sauce in the pan then stir well. Keep stirring till the sauce is completely submerged to the ribs.
  • Turn the heat to high until the sauce boils then lower the heat and remain for a few minutes. During the cooking process, remember to stir the ribs so that they are absorbed all the sauce evenly.
  • Then add 3 tablespoons of lime juice to the pan. Continue to cook until the sauce is thickened and stick to the ribs. When the ribs are soft and turn golden, add a little pepper then your dish is done.
  • The dish will be great if having some fresh lettuce and rice.
