“Nom du du bo kho” is so popular in Vietnam and it has gradually become a familiar dish in Vietnamese wedding parties as well as death anniversaries. Enjoying this dish means that you can feel the spicy taste of dried beef, the utter spiciness of chili, the crispiness of green papaya, the nutty taste of peanut and the pungent flavor of herbs. In this article, we will show you the basic knowledge of Vietnamese green papaya salad with jerky including the ingredients, ways of processing as well as some of the famous places where sell this traditional dish in Hanoi.  

I. Green Papaya Salad With Jerky – The Introduction

The most important ingredient of this street food is dried beef. The dried beef is cut into thin slices, soaked with the sauce including garlic, salt, sugar, ginger and chili for about one night, and then put into the oven. Carrot and green papaya are sliced into julienned strips and mixed with chopped herbs. The dressing is made of vinegar, fish sauce, sugar, chili, and soya sauce, and it is considered as the secret of a delicious dish. Then, soak pickled carrot and green papaya in the dressing and top it with dried beef and roasted peanuts.  A colorful dish with the wonderful aroma and taste will surely satisfy all gourmets.

II. Where To Eat Green Papaya Salad With Jerky In Hanoi

At this shop, you can easily see groups of people sit on plastic chairs on sidewalks to enjoy this green papaya salad. This stall opens from 3:00 to 6:00 pm, and each plate of “nom du du bo kho” is about 25,000 VND.

“Nom Long Vi Dung” is very famous for green papaya salad with jerky. The bowl of “nom bo kho” here is quite full. Apart from traditional ingredients such as shredded green papaya and fresh herbs, this bowl also includes sliced dried beef jerky, thin boiled beef, dried liver, etc. When eating, all of the ingredients are mixed with sour and sweet salad dressing. A bowl of “nom bo kho” here costs 35,000 VND. However, many people said that the salad dressing here is slightly sweet and the jerky is sometimes difficult to chew. 3. “Nom Mai Nga” On Ham Long Street

“Nom Mai Nga” is probably one of the most popular addresses for many people, especially in summer. This dessert shop is highly recommended for those who love typical dishes of Hanoi. Green papaya salad here includes two types: traditional salad with jerky and mixed salad with other ingredients from cows. The special thing of “nom bo kho” here is that the salad dressing is neither too sweet nor too sour. In addition, this restaurant also serves some other dishes.

This small shop is located in Ham Long lane, opposite Ham Long church. It has only a few sets of plastic tables and chairs, but it is always crowded with guests due to its unique specialties. The green papaya salad with jerky costs 25,000 VND / dish with the mixed salad costs 35,000 VND / dish.

Walking around the Old Quarter, people often see the image of an old man riding a bike on the road with the ingredients to make” nom bo kho”. The first thing you may notice is the scissors that he holds in his hand. Although it is a street stall, the price of his “nom bo kho” ranges from 40,000 to 50,000 VND. Although the price is higher than average, his green papaya salad is very plentiful with ingredients such as crunchy papaya, beef jerky, etc. with sour and sweet salad dressing. Apart from traditional ingredients such as green papaya, beef jerky, roasted peanuts, vegetables, this “nom bo kho” also added shredded pig’s skin mixed with “thinh nep”, making this dish quite strange. The colorful dish come from crispy white papaya, yellow peanut, reddish brown beef, green leafy vegetables, mixed with sweet and sour fish sauce. The shop is located in the first street from Chua Boc turning to Ton That Tung, and it only sells from 3 pm. The price of a plate of green papaya salad with jerky costs 20,000 VND.

This shop is located at the intersection of Hang Bun and Pham Hong Thai and it has a very special way of processing. Beef jerky here is like a solid black wood, but after tearing, each piece of meat is very sweet. Dried beef jerky reminds us of the famous buffalo meat of the Northwest Highlands.

Apart from the traditional ingredients such as green papaya, dried beef and some organs including spleen, cartilage, tendon, etc., diners can also order a plate of dried beef or organs. Besides, “nom bo kho” here also has fried garlic. The shop is open from around 4pm daily.
