In cold nights in Hanoi, it is not difficult to find street vendors that sell many winter specialities, such as fried bread sticks, grilled corn and sweet potato, fried banana cakes, and boiled snails. Especially, grilled fermented pork roll (Nem nuong) is a favourite among young generations in Hanoi thanks to the fleshy taste of the well-marinated fermented pork rolls and the special fragrance of the banana leaf cover. I. Grilled Fermented Pork Roll – The Introduction:

Fermented pork roll is a meat roll made from some ingredients, including minced pork skin, ground pork thigh, fish sauce, chilli, garlic, sugar and salt. Then, it is pressed and fermented by guava or fig leaves without cooking. Fermented pork roll is considered as a traditional snack in Vietnam, it differs from place to place. Most versions of fermented pork roll can be distinguished by its originating area’s name, such as Khanh Hoa fermented pork roll, Thanh Hoa fermented pork roll, etc. Especially, Thanh Hoa fermented pork roll is favoured by Northern people due to its flavour of a subtle fragrance and sour taste.

One of the famous street foods in Hanoi is grilled fermented pork roll. And, you can taste this street food at some of the following famous restaurants and street vendors.

The aroma will lead you to the alley on Au Trieu where people sit on tiny plastic stools to enjoy grilled and fried fermented pork roll. For over 15 years, Au Trieu alley has become famous thanks to Nuong Phuong Fermented Pork Roll. This dish combines sour and sweet tastes and it is spiced up by home-made chilli sauce. A plate of grilled fermented pork roll are paired with fresh fruits, like jicama, green mango and some fried potatoes or grilled dried fish.

While you appreciate the sticky texture of grilled fermented pork roll, you will be immediately impressive by the crispy coat and tender fillings. The grilled fermented pork roll is served on a banana leaf with homemade chilli sauce and fresh fruits. In order to make the taste better, the stalls offer some iced tea with lime.
